Ingredients for Yayla Soup Recipe:
Ingredients
1 coffee cup rice
6-7 cups of water
1 cup yogurt
2 tablespoons flour
1 egg
Salt
For the sauce
3 tablespoons of oil
2 tablespoons of butter
Mint, red pepper flakes if desired

Yayla Soup Preparation:
Put 6-7 cups of water in a pot. And place it on the stove over medium heat. Wash the rice while the water is heating. If available and if you wish, you can make your soup even more delicious and beneficial by using chicken or beef broth instead of a glass or two of water. Add the washed rice to the heated water and let it cook. Meanwhile, whisk the yogurt, flour and egg in a deep bowl. Before adding this mixture to the soup, add one or two tablespoons of the heated water into the bowl. Thus, we prevent the yogurt from curdling. At the same time, the fact that the eggs and yogurt you will use are at room temperature will prevent the mixture you will add to the soup from curdling. While adding the mixture to the soup, whisk it continuously with a whisk. After adding the mixture, turn the heat down. Continue whisking the soup until it boils.
After the soup reaches the boiling point, stop whisking and heat the butter and vegetable oil in a small pan, add mint and roast the mint. Add the sauce you prepared to the soup and mix. Stir the soup for 1 more minute and your soup is ready. You can serve it hot. As we mentioned above, you can also consume this soup cold during the hot summer months. Enjoy your meal.
